Crepes
1 c. flour*
1 egg
2 c. milk
Mix well. Heat a pan & spray with cooking spray between each crepe. Turn crepe when the edges start to pull away from the pan. Cook the other side for about 30 seconds and ENJOY!
Breakfast crepes with ham, eggs, cheese, spinach, tomatoes etc are great. You can also do yogurt with all the fruit you can think of. Dessert crepes are great too. We like Nutella with strawberries, bananas, and whipped cream. Another favorite is created by dusting the crepe with powdered sugar, squeeze juice from a lemon (enough but not too much!), and adding whipped cream. Delish!
*Whole wheat flour does NOT work!

Granola
Mix together:
15 c. old-fashioned oats
1 1/2 c. wheat germ
1/2 lb shredded coconut
3 c. sunflower seeds (raw)
4 1/2 c. chopped nuts (combination of walnuts, pecans, almonds, peanuts and/or mixed nuts)
In a saucepan, combine:
1 1/2 c. brown sugar
2 c. water
1 1/2 c. oil
3/4 c. honey
3/4 c. molasses
2 tsp. salt
1 T. cinnamon
1 T. vanilla
Heat until sugar and honey are dissolved but don't boil, stirring occasionally. Pour over oat mixture and mix well to coat granola. Spread on cookie sheets (5) approximately 3/4 to 1 inch thick, and bake at 325 degrees for 17-20 minutes, or longer if you want it to be crunchier, stirring once. After the granola cools, add raisins or dried fruit if desired.
I usually half this recipe and it makes just under 2 cookie sheets. Mom submitted a different granola recipe... but this is also hers and the one I use. :)

Breakfast Bread
24 Frozen Rhodes rolls
½ pkg. Instant butter scotch pudding
½ sq. butter (melt)
½ cup brown sugar
1 tsp. Cinnamon
chopped nuts (as desired)
Arrange frozen rolls in a greased bunt pan. Sprinkle pudding over them. Combine melted butter, sugar, cinnamon and spread over the rolls. Then sprinkle nuts as desired.
Let rise overnight and cook in the morning. Bake at 350 degrees for 30 minutes (I find that it takes longer).
(Before we go to bed I put tin foil on the oven rack (sometimes the sauce will overflow) and place the pan inside the oven and then I set my time bake so that it will start cooking early and be finished by the time we get up.)
