White Chili

2 c. cooked chicken, cut up
1 onion, chopped
4 c. chicken broth
2 tsp. garlic powder
2 tsp. oregano
2 tsp. cumin
1 tsp. cayenne pepper (optional)
1 can diced green chili
3 cans great northern beans
1-3 c. pepperjack cheese
1-2 c. sour cream

Cook onion in part of broth. Add the rest of the broth, chicken, spices, beans and green chili. Add desired amount of cheese and stir till melted. Add desired amount of sour cream last and heat through. Serve with tortilla chips (or rice, pasta or toast). (The amounts of pepperjack cheese &/or cayenne pepper would depend on how hot you like it. I usually add a smaller amount of the cheese for flavor but no cayenne pepper or it is too spicy hot. You can also cook the chicken and onion and then add the rest of the ingredients, with the sour being last just before serving.)
